For the project you will still be showing people in five years. Progress visits at every milestone, a finished set at the end, and a hero film of the whole build. Booked before the slab goes down, so none of it happens off camera.

Why not just book shoots as you go
Because you will not. The slab goes down on a Tuesday you are three jobs behind, the framing goes up while you are chasing a variation, and nobody thinks about photos until the scaffolding comes down. By then the only thing left to shoot is a finished house, which every builder has.
Lock the visits in at the start and the bits that prove the standard exist too.
A fixed scope with a defined beginning and a defined end, invoiced at each visit rather than monthly.
